Amaranth poha/ upma


1/2 cup Popped Amaranth .
1 and 1/2 cup water
1 tsp cumin seed
1 tsp crushed ginger
sendha namak to taste
2 tsp peanuts
1 small chopped tomato
1 small,diced potato
1 small,diced gajar
1 tsp desighee
1 tsp chopped green chilli
1 tsp lime juice


Take a heavy bottom vessel,add Amaranth and dry roast it till you feel the aroma.Keep it aside
Now take another pan add desi ghee, cumin seeds, peanuts,ginger and saute for a while.Add potato tomato and carrot,sendha namak and saute for another 2 mins. Add water and cover with lid till the veggies are soft.Add Amaranth, mix well, till it absorbs water.Squeeze lime and serve hot.
