Arugula ,beetroot and cottage cheese salad

70g cottage cheese
1 cup arugula
1/4th cup fresh orange juice/ grape fruit juice
1 tsp olive oil
2 tsp balsamic vinegar
salt and pepper to taste
Wash beetroot properly.Peel the outer covering and cut into a little big slices. Roast in oven or air fryer.cut paneer cottage cheese into cubes and roast them also. Take a small bowl add balsamic vinegar,olive oil,salt and pepper. whisk together.
Take a serving bowl put beetroot slices,cottage cheese and arugula. pour dressing and orange/ grape fruit juice all over the salad.
