Garlic and herbed tofu
Ingredients- 300 gm Tofu 1 medium size zucchini 100 gm Yellow Pepper 215 gm Cherry Tomatoes 2 apricots cut into halves 1 tbsp fresh rosemary chopped 2 tbsp olive oil 1 tbsp balsamic vinegar Salt & pepper to taste 2 tbsp chop Garlic 1tbs honey 1 tbs lemon juice Marinade- mix balsamic vinegar, 1 tbs olive oil, rosemary and crushed garlic in a bowl add salt and mix well .add tofu cubes, stir to coat well .marinate tofu for 30 minutes.
Method- quarter the zuccinis lengthways and cut into 2cm chunks, deseed the pepper and cut into 2.5cm pieces, chop the garlic. Thread the tofu, zuccinis, pepper, cherry tomatoes and apricots on to eight 15cm skewers or on a small one. Mix together the remaining olive oil, honey and lemon juice brush the vegatbles and then grill under a moderately hot grill for 8-10 minutes, turning and brushing again with the mixture, until the vegetables are brown. Sprinkle black peper.garnish with fresh rosemary leaves. Serve hot. Dip- 1 tsp roasted sesame seeds 1 tsp lemon juice 1 tsp honey 1 tsp balsamic vinegar Red chilly flakes Salt to taste Mix well and serve with herbed tofu.
