glass noodle salad

 Ingredients

 
40 g glass noodles

 

1/2 cup , diced red yellow bellpepper
 
a fist full fresh coriander 
 
3-4 cloves garlic
 
julienne of 1 medium onion
 
2 tsp lemongrass sauce
 
1 thai chilli 
 
1 tsp palm sugar or coconut jaggery
 
 4-5 cherry tomatoes, cut into halves
 
2 tsp fresh lime juice
 
2 stalks of celery,
 
2 tsp Roasted and crushed peanuts
 
Method 

 Pound garlic, chilli and make paste with the help of mortar and pastle. Add sugar to it and pound until dissolved.Then add lemon grass sauce, lime juice and stir to mix well.
 
Place tomatoes, onion, celery into a large mixing bowl.
 
Bring a medium pot of water to boil. cut the glass noodles into 2-3 section with the help of scissor. boil the glass noodles in water for 2 mins and then remove from water with the help of tong , 
place it into a strainer to drain extra water and set aside.

 

Add the noodles to the mixing bowl pour the dressing on the top and toss to combine. Add chopped coriander and crushed peanut and mix well.

 

More suggestions: you can add boiled and shredded chicken or shrimps or tofu 50g to enhance the protein content .
