Idli recipe take 3 cups sela or parmal(parboiled rice) rice 1 cup dhuli urad dal. rinse the urad dal & rice seprately. soak the urad dal in a separate bowl or pan. soak the rice separately. water for soaking is an inch above dal or rice. soak for atleast 4-5 hours. grind them in a wet grinder seprately. now mix dal and rice in a big pan,add salt and keep it in a warm corner of the kitchen overnight.it will ferment and raise. you need an idli steamer grease the idli mould with little refined oil ,scoop 1 tbs batter in each mould.adjust the moulds in idli steamer put 1 cup water . let it steam for 10 minutes with the lid covered. let it stand for another 10 minutes now you can scoop it out gently with a spoon. serve with samber and chutney. for variation can add chopped roasted ginger,curry leaves green chillies to idli batter.
