protein rich baaji

 Ingredients

green pumpkin, small pieces-1 cup
carrot, chopped-1/4th cup
moong sprouts-1/2 cup
onion chopped - 1/4th cup
small tomato, chopped
garlic, minced-1 tsp
pav bhaji masala-1 tsp
red chili powder -1/4th tsp
turmeric - 1/4th tsp
salt to taste
olive oil-1 tsp
chopped coriander to garnish
butter-1/2tsp

wheat bun, toasted -1


Method

Pressure cook pumpkin, carrot with 1 cup water at medium flame. wait for 2 whistles and switch off the Gas stove..cool it. Boil moong sprouts in water till tender.Drain out water.

Hand pound the the veggies and sprouts separateley.and keep it aside.

Now take a pan and heat it. Add oil and heat it. put garlic, chopped onion and stir till golden brown. Add tomatoes and stir. Put salt, turmeric, red chili and pav bhaji masala while contsant stirring.once all the masala get cooked and you see oil on the side of the pan add veggies and sprouts and mix well. adjust salt to taste. cook for another 2 mins. Garnish with fresh coriander.Put butter on the top.
Serve with toasted wheat bun and kuchumber salad.
