 Quinoa salad with twist


Quinoa-2 tbsp

Green apple-1/2 (cut into small pieces)

Boiled corn-1 tbsp

Bellpepper-1/2 cup (finely chopped)

Carrot-1/2 cup (finely chopped)

Lemon zest-1/2 tsp

Spring onions-1/2 cup

Onion-1/2 (chopped)

Garlic (2 cloves)

Green chili-1 no

Organic soy sauce-1 tsp

Olive oil-1tsp

Salt and pepper-acc taste

Method- Boil quinoa in 1 liter water for 10 minutes and keep it covered for five minutes. Now throw the extra water and strain it. Keep aside for cooling. Take oil in a non stick pan; add garlic and onions sauté for a minute. Now add bell pepper, spring onions, corn, and green chili, Mix and sauté well. Add soy sauce, salt and pepper and mix properly. Now off the flame. In  another bowl take quinoa and sautéed veges now add green apple, and lemon zest into it. Mix properly. Adjust seasoning and serve.
