red rice tofu and veg bowl

 Ingredients:

 
Red rice- (cooked)-1 cup
Spring onion-2 full (finely chopped)
Bell pepper, big slices 1 cup
Mushroom ,diced-1 cup
tofu, cubes 70g
onion, big slice- 1/3rd cup
Extra virgin olive oil-2 tsp
tomato puree,home made -1/2cup
Naturally brewed soy sauce- 1 tsp
roasted seasme seed-1 tsp
Salt –acc taste
Pepper-acc taste
Green coriander-(for garnishing)
 
Method for cooking Red rice.
Soak red rice in water for 3-4 hours before cooking. Cook rice in a pressure cooker for up to 3-4 whistles.
 
Method: Take a pan, grease it properly with little olive oil and saute tofu till little brown. put salt, soy sauce,1/2 of chopped spring onion and mix well. sprinkle pepper and 1 tsp roasted sesame seed. Keep it aside.
Take the rest of the olive oil into another pan and heat it. Add mushroom, bell pepper, onion and stir at high flame for 2 mins. Add Tomato puree, salt and cook it for another 3 mins. Now add spring onion and stir well. Leave for a few seconds and turn off the flame. Garnish with coriander.
 
Take a bowl, arrange cooked red rice, tofu and veggies.
