water chest nut stir fry


10-12 peeled water chestnut
10 Button mushrooms, sliced
1 Red Bell pepper (Capsicum) , cut into cubes
1 Yellow Bell Pepper (Capsicum) , cut into cubes
1 small Bok Choy , hand teared
5 Stalk Spring Onion Greens , chopped
1 tsp naturally brewed Soy sauce
1 tsp olive Oil
salt and pepper to taste
Take a vessel, add 1 cup of water and heat. put waterchestnut and blanch for 2-3 minutes.Drain water and keep it aside to cool. slice them into halves.
Heat a wok with oil, add red and yellow bell peppers and stir fry till they are soft and lightly crunchy.
Once done, bok choy and stir fry till they are cooked. Add mushroom and saute until the moisture goes away.
Add water chest nuts at the end and stir fry for 5 minutes. Finally add soy sauce and sprinkle pepper powder and salt on top and toss well.
Sprinkle some chopped spring onions and serve hot.
